Salmon Loaf with Sprouted Rice: rich in Omega 3 and GABA

This my wonderful omega 3 rich, GABA rich salmon Loaf.

The flavor is delicate.  The GABA  rice gives a sweet flavor and the fennel adds a subtle flavor which is really nice.  This recipe is my own creation.  If you cook like I do, then you taste everything you prepare.  I love the flavor of this combination.  When you add spices and herbs to recipes just go slow, too much can ruin the flavor.

Wild Caught Salmon and Sprouted Rice Loaf.

I  x 15 ounce can of sockeye wild caught salmon
3 – 4  cups of sprouted rice grain, ground on the grain setting of your high speed blender
1 large yellow onion
4 stalks of celery
2 eggs  (free range)
A good pinch of fennel seeds

Loaf pan – glass is best for this –or other safe non porous cookware.
Blendtec or other high speed blender that will grind grain.
Mixing bowl
Wooden spoon or other spatula for mixing
Fork for flaking and mashing salmon

Mash the salmon till very fine
Blend the eggs, onion and celery till finely chopped – you don’t want it chunky
Mix all together and place in the loaf pan.   If mixture is a bit runny, allow it to sit a while in the refrigerator so let the rice absorb the moisture.  If you are not gluten free, you can also add some sprouted wheat bread which has been blended to fine crumbs
Bake on about 300-350 until cooked – takes about 40-50 minutes

You will know because it will be set on top.

Note: I always dry my sprouted rice out in the on trays in the refrigerator.  It grinds up much better like this.  Ground rice is very adaptable to many recipes, it is also good to use in recipes like burgers and loafs because it soaks up some liquid helping to give shape and bind the loaf or burger

Tip: Leave the bones in the salmon and mash them well.  They are an excellent source of calcium

This recipe is excellent hot and cold.  Serve with a side of greens, some red or purple potatoes, and a wonderful berry smoothie.   Serves six easily.

Leftovers are great for lunch.  The protein will keep you going throughout the day.  Serve with a side salad or my favourite – a green smoothie.  (I love this combo for lunch– it makes for a really easy evening in the kitchen if I know we have eaten plenty of vegetables and protein through the day)
